If you’re looking for a tasty, healthy side dish, look no further. This recipe for winter squash takes less than 15 minutes to make, so you can get dinner on the table in no time. Any type of winter squash will work including acorn, butternut, banana, kabocha...if you can cube it, you can use it!
- 1 Cup Winter squash, cubed
- 2 Cups Chicken stock or water
- 1 tbsp butter
- 1 tsp grainy mustard
- 1 tsp lemon preserve
- 1 tsp fresh parsley, chopped
Par-boil squash in water or chicken stock for 5 minutes in small sauce pan. Drain off liquid. Over medium heat, gently stir in butter, mustard, lemon preserve. Finish with parsley.
