Morel Cream Sauce
This creamy and fragrant morel sauce is a perfect topping for chicken breast
The morel cream sauce includes everyone’s favorite ingredient: bacon. The sauce also contains parmesan cheese and fresh thyme, creating something so creamy and delicious, you’ll be licking your plate! This sauce on top of pan-fried chicken could pass as a restaurant meal, but it’s simple enough that you could make it any day of the week.
Ingredients
- 1 tbsp Olive oil
- 4 Slices Bacon, chopped
- 8 Morel mushrooms, fresh or dried
- 3 Sprigs Thyme, de-stemmed
- 1 piece Parmesan rind
- 1 Cup White wine
- 1/2 Cup Heavy cream
- 2 tbsp Cold butter
- Salt and Pepper to taste
Instructions:
For sauce, heat oil in medium sauce pan along with bacon. If using dried morels, re hydrate in simmering chicken stock for 10 minutes. Cool and squeeze out excess liquid. Roughly dice morels, adding them to bacon. Saute until bacon slightly browning. Add thyme and Parmesan rind. De glaze pan with wine. Add cream, simmer gently for two minutes, stirring occasionally, till thickened. Remove Parmesan piece. Stir in butter. Season to taste.
