Home Made Ricotta Cheese
Making ricotta at home is not as hard as you may think - you're just a few ingredients away from impressing the whole family!
Ricotta is an amazing ingredient for some of your favorite dishes, and it's also amazingly easy to make at home!
All you need are four ingredients, and you're a few steps closer to a fresh, sweet and moist cheese that is typically reserved for special occasion meals. And to top it off? You're sure to impress all your family and friends.
This cheese is perfect for layering into lasagna, and is also delicious as a filling for stuffed shell pasta, manicotti, and as a topping for toasts, pizzas and soups. And don't forget - it is also the heavenly filling for some of your favorite sweet treats, like Sicilian cannoli.
Instructions:
- Line a large sieve with a layer of fine-mesh cheesecloth and place it over a large bowl.
- Slowly bring milk, cream, and salt to a rolling boil in a heavy pot over moderate heat, stirring occasionally to prevent scorching.
- Add lemon juice, then reduce heat to low and simmer, stirring constantly, until the mixture curdles, about 2 minutes.
- Pour the mixture into the lined sieve and let it drain 1 hour.
- After discarding the liquid, chill the ricotta, covered; it will keep in the refrigerator 2 days.
