- 1 tbsp Olive Oil
- 3 tbsp Butter
- 2/3 Cup Corn Meal
- 1 Cup Chicken Stock
- 1 Cup Heavy Cream
- 1/4 Cup Grated Parmesan cheese
Preheat oil and butter in medium saucepan over medium heat. Stir corn meal till coated. Add chicken stock, stir occasionally for 30 seconds to prevent sticking. Allow to boil gently. Add half the cream, stirring to combine. Add remaining cream and continue stirring. Sprinkle with Parmesan and stir in. Polenta should be thickened. Season with salt and pepper to taste. Serve immediately.
