Chicken Breast with Morel Sauce

- 2 Chicken breasts, skin and wing on
- 1 tsp salt
- 1/2 tsp Ground pepper
- 2 tbsp Olive oil
Cut off wing leaving one bone. Score and peal off skin and meat. Dry chicken with paper towel. Heat oil in large heavy bottom pan on low heat. Cook chicken, skin sided down for 5-7 minutes per side. Serve chicken with Morel Sauce and roasted vegetables.
